                                     Main Points to be Considered


                                        In Squash/Syrup Making





          1.     Before extraction of lime or Galgal juice put some sugar in the container to

                 avoid bitterness of Juice due to exposure to air.

          2.     Care should be taken not to add lime juice in hot Sugar Syrup otherwise squash
                 will turn bitter.
          3.     Citric acid or Lime Juice is added to prevent the crystallization of sugar in the

                 syrup. It also cleans the sugar syrup besides increasing the acidity and taste of
                 the product.

          4.     While  illing squash in clean bottles leave a head space of (1-1.5 inch.)
          5.     Dilute the squash with water before serving it.
