Foreword
In the Modern era, commercial horticulture is growing
at rapid pace. Value addition is the essential component of the
modern Horticulture.
At present 30-35% of the produce does not reach to the
consumer due to various reasons and the only way out to save
this precious produce is preservation, processing and value
addition. It also creates employment generation and adds to
the farmers' income.
In order to create awareness among the farmers for
processing and value addition, many initiatives have been

twenty-fourdemonstrations cum facilitation centers across the
Jammu
districts of Jammu Division where farmers can avail multi-
facility.
In this direction, “Guide on value added Products” by the Department is another
milestone. I feel immense pleasure to present this book with the hope that it shall be benecial
not only for the producers but also for the people in general.
Sh. L. K. Bali ex Joint Director &Sh. VikasAnandChief Canning Instructor have
worked hard in preparing this book and I am highly grateful to both of them for sparing their
valuable time for completing it in time bound manner.
